These are fudgy and delicious but REALLY rich so a little goes a long way. They are gluten free, dairy free and a source of protein. My daughter made these with me and was extremely judgemental about the use of black beans, swearing she wouldn't eat any, however she was completely won over the second the smell of them baking overtook the kitchen.
Ingredients 1.5 cans black beans, drained 40g whole oats (I whizzed them to flour in coffee grinder) 40g cacao powder (use less if you don't like really rich brownies) 100g coconut oil 1stp vanilla essence 1tsp baking powder 1tbsp Truvia 40g honey Smashed dark chocolate bar couple of tbsp water to loosen up if necessary
Process Blitz all but the chocolate in a Magimix or food processor for two minutes then stir in the chocolate chips. I found that I needed to add a little water at this point. Pop in a preheated oven (around 200) for 25 mins. If it seems undercooked then let it cool and leave it to firm in the fridge for an hour.
My kids love them, even if they were initially horrified at the use of beans in baking. Enjoy!
