Believe me, I thought these would be pretty horrid but I went for it anyway and was so glad I did! They are delicious and when freshly baked they are better than any other chocolate chip cookies I've tried. My kids love them and I love that they have something gluten free, extremely low in sugar (depending on the chocolate you chose, I go as dark as possible), high in fibre, good fats and a good protein source. Total win!
Ingredients: 2-3 ripe bananas 2 can of organic chickpeas 1 cup of gluten free oats
2 tbps ground flax
2 eggs tsp baking powder 2 tsp Stevia teaspoon vanilla essence
3 tbs Cacao nibs chocolate chips (or smashed up bar)
Organic vanilla essence
Process:
Zip all ingredients in a food processor for 2 mins, then add the chocolate chips, mix in to balls and add to preheated 180 oven for 20-25 mins.
