Ingredients
1.5 tins cannellini beans
2 eggs
2 tbsp Truvia
2 tbsp extra virgin coconut oil
2 tsp vanilla extract
1 tsp baking powder
2 tsp cinnamon
200 grams whole oats
100 grams dark choc chip
1.5 tbsp pure peanut butter
Firstly, trust me on this. These are AMAZING. My daughter nearly cried when she saw I was putting beans together with chocolate, however as soon as that smell of baking took over, she was all in. They are every bit as good as my banana muffins, black bean brownies and chickpea cookies (see my facebook and insta for recipes), it’s worth it.
The process!
Preheat oven to 200. Blend the beans in a Magimix or food processor until they are really creamy then add in the Truvia, coconut oil, cinnamon, peanut butter, baking powder, vanilla and eggs. Blend for a couple of minutes. Add in oats and blend until all combined. Stir in the chocolate chips, add to a baking tin and smooth. Bake for around 35-40 minutes. Let them cool then cut them in to squares and watch your family fight over them. Share on my social media if you try them – I’d love to hear how you get on.
